available in the red meat industry. The Computer Vision System (CVS) consists of two separate camera systems. Whether used independently or simultaneously, the
camera systems accurately and consistently obtain quality and yield measures of beef carcasses.
Ribeye Camera acquires an image of the ribeye at the grading
stand. It objectively measures ribeye area and shape, marbling percentage,
fat thickness, and lean/fat color.
Whole Carcass Camera acquires a whole carcass image
and uses over 200 carcass measurements to predict salable meat
