Conventional Long Grain Rice Products
Long grain rice (Indica variety) is grown mainly in the southern United States. It has the highest amylose content of all rice varieties (approximately 22 percent) and the cooked product is firmer and less sticky than shorter grain varieties with lower amylose. Long grain rice flour products are used in a wide variety of consumer goods (i.e. infant cereals, regular cereal products, French fry batters, and extrusion).
Conventional Medium Grain Rice Products
Medium grain rice (Calrose variety) is grown in the Southern U.S. and California regions. It is very clean rice with a strong resistance to heat and insect damage. The amylose content of this rice is (approximately 18 percent) softer and stickier than long grain. It can be used in many similar applications to long grain rice but it is more expensive. Medium grain rice is more resistant to starch retro-gradation than long grain. As a result, it is used for thickeners and freeze/thaw applications.

Organic

Organic farming involves committing to two principles:

  1. Ecological production
  2. Organic integrity

Ecological production entails using farming and ranching techniques and materials that conserve and build the soil resource, pollute little, and encourage development of a healthy diverse agro-ecosystem, which supports natural pest management. These techniques and materials include diverse crop rotations, green manure, cover crops, livestock manure, composting, mineral-rich rock powders, etc.

Maintaining organic integrity consists of actions that prevent contamination of organic production with prohibited materials, and that prevent the accidental mixing (commingling) of organic and conventional products. Farmers accomplish this by not using prohibited synthetic fertilizers and pesticides. They also take precautions against pesticide drift from off-farm and other sources of contamination. Many kinds of equipment and storage areas employed in organic production must either be dedicated to organic use or properly cleaned between conventional and organic use. A considerable amount of paperwork and documentation is required to ensure organic integrity.

Farm fields must not use synthetic fertilizers and pesticides for three full years preceding the harvest of the first organic crop. Farms or specific fields that do not yet meet this requirement may be considered in the "transition period".
