Peel 2 sweet potatoes and three regular potatoes. Boil the regular potatoes until soft. Mash and add cream and butter, salt and pepper. Chop the sweet potatoes into sticks about 1cm thick. Place on a tray and drizzle with olive oil and a tbsp. of honey. Sprinkle with salt and pepper. Bake at 350F for 20 mins until golden and soft. Sprinkle the pork chops with salt and pepper. In an oven proof frying pan sear the chops on high heat until golden, place in a 400F oven for 10 mins. Remove and let rest. Add a little pork stock to the pan and reduce to make a sauce.
