Our sausages are made with natural casings. On high heat the skins may burst. Medium heat for about 10 mins until they are browned should do it. If you are BBQing them cook on a medium flame. Turn the heat up when they are nearly done to achieve good grill marks.

In an oven proof frying pan sear the chops on high heat until golden, place in a 400F oven for 10 mins. Remove and let rest. Chop the sweet potatoes into sticks about 1cm thick. Peel 2 sweet potatoes and three regular potatoes. Mash and add cream and butter, salt and pepper. Sprinkle the pork chops with salt and pepper.
