In an oven proof frying pan sear the chops on high heat until golden, place in a 400F oven for 10 mins. Remove and let rest. Chop the sweet potatoes into sticks about 1cm thick. Peel 2 sweet potatoes and three regular potatoes. Mash and add cream and butter, salt and pepper. Sprinkle the pork chops with salt and pepper.
