This menu utilized as many local resources and homemade (from scratch) meal solutions as possible:  Ontario peaches, strawberries, blueberries, and asparagus were all in season and readily available from local markets.  Furthermore, the three meals prepared at Hart House Farm were inspired by the rustic influences of the countryside.

This menu was constructed with as much variety possible within the requests of the Head of Arts.  Sandwiches were made with high quality sliced meats and special Foccacia and whole grain buns which were bought from St. Lawrence Market.

This menu has a little of everything for everyone either grilled, fried, baked, or fresh.  All of the food was able to be eaten without the use of a plate or fork- but maybe a napkin!  Casino high rollers were able to eat comfortably at their table of choice without having to step away from their hot hand and/or rolls.

Dinner for 54

A customary Christmas dinner with a southern flare.  The KA society was embellished with a four course meal inspired by traditional christmas turkey and homemade egg nog (infused with spiced rum of course).  Diners comfortably shared with their dates homemade chocolate and vanilla mousse.

This menu was inspired entirely from a country BBQ theme.  The sides included tossed Salad, Cornbread, Mashed Potatoes, potato salad, and a peach cobbler to finish it off.  Delicious!

This menu was designed according to the cookbook of legendary Cajun Chef Paul Prudhomme. He is the inventor of the Blackened Redfish and owner of the famous K Paul’s kitchen in New Orleans, LA.  All ingredients were as authentically Cajun as possible- painstakingly tracked down from across the GTA area.  Delicious!
