It makes a more than generous lunch for one.

A few months ago, as I was watching the episode of ‘Diners, Drive-ins, and Dives’ that featured these beet sliders, I, along with every other Weight Watcher member out there, thought to myself, “Zero point sliders! I want the recipe!”. Within hours people were on the WW forums asking about it, and now the good folks over at the Food Network have posted it on their website. Of course, as we all know, when something is too good to be true it probably is; these sliders, once you add the bun, the dressing, and the cooking oil, are not exactly zero points. They are, however, extremely tasty.

Just take a pork shoulder roast, if it’s really big cut it into two or three pieces, season it with a dry rub, and put it in a pot with about 1/4 a cup of liquid smoke. I usually make the pulled pork and the baked beans the day before since they can be easily reheated and kept warm in crock pots. Just give it a good wash and put in in the cooking chamber unhusked next to, or on top of, whatever else is in there.

For a quick lunch spread some asparagus on a sheet of parchment paper, drizzle them with olive oil, season with tarragon, toss in some sliced prosciutto and mushrooms. Keeping the Sun Oven at such a low temperature requires a bit of attention, it needs to be focused slightly away from the sun and adjusted every 30 minutes or so. It can be served as a side dish or paired with solar roasted squash to make a nice vegetarian main course.

If you have two pots that fit side by side in the Sun Oven you can get the base of this lentil stew going while the lentils cook in the other pot. Cook the lentils in the Sun Oven the day before making this vegetarian twist on meatloaf. Lightly oil a baking sheet or line with parchment or a baking mat. Pour water, oil and honey into bread machine pan. This muesli raisin bread makes us both happy. The banana discs came out great.

I cook the green beans for this savory pie the way I learned in Italy, because I think they taste better, and since the potatoes cook while I’m preparing the beans I boil them inside too. I was hoping seasoned dehydrated veggies could become a new-found version of chips; a salty snack ready to eat straight from the container, but I think I’m going to have to keep looking.

I managed to throw this soup together with ingredients I had on hand despite the fact that I wasn’t planning on doing any solar cooking today. So far we’ve had it with pasta, in egg sandwiches along with some of the bacon, and with tonight’s twist on a traditional Italian soup. I thought the bacon infused tomatoes would give a bit of an American flair, a sort of Pork ‘n’ Beans meets Pasta Fagioli.

Drape a long piece of tin foil folded in two over the bottom and up the sides of an oval, lidded roasting pan and coat it with cooking spray. This recipe uses onion, carrots, and zucchini but be creative and use what you have on hand. Stir in the cooked onions and the wine and cook until the wine evaporates. Pound rigatoni prepared according to the instructions on the package. This roast is easy to make and packs a lot of flavor.
