Reacting to consumer demand, I am planning to split my crop into two types going forward.
First, I will offer premium quality grapes with all of the above-mentioned practices. These grapes will be grown at 3 to 3.5 tonnes per acre depending on the variety, and then during the season, the crop will be reduced to 2 to 2.5 tonnes per acre depending on the variety. Orders for these premium grapes are on a first-come first-served basis.
I would also be willing to reserve larger areas of the vineyard or a particular variety for a wine club with specific practices in mind. The price for these grapes would be negotiated depending on the particular requirements, yield and practices involved.
I use gentle whole berry pressing to extract white juices as settled juices, while my red varieties are sold as crushed and de-stemmed musts. Ice wine juices of most varieties are also available with a minimum order required. And if preferred, grapes are available for sale by the lug.
