Availability

Our fishing season runs from early March until the end of January, depending on the winter conditions. During the season we offer fresh whole fish and fillets. There is also a frozen supply all year. The fillets are vacuumed packed to seal in all the freshness, flavour and texture.

Whitefish

The Lake Whitefish (Coregonus clupeaformis) is a species of freshwater whitefish from North America. They are found throughout much of Canada and parts of the northern United States of Minnesota and Michigan, including the Great Lakes. A valuable commercial fish, whitefish are also occasionally taken by sport fishermen.

Cooked whitefish has an exceptionally fine, sweet, light flavour. Even those who don't like to eat fish find they can enjoy whitefish due to its mildness. It's perfect for a variety of dishes and adapts to almost any cooking method.

Whole Dressed

  • Size; medium (2-3lbs), large (3-4lbs) and jumbo (4lbs and up).
  • Frozen fish are packed in single layers so they can easily be broken apart.

Filleted

  • Fresh or frozen.
  • Cut options; skin removed, pin bone out (PBO).

Lake Trout

The Lake Trout (Salvelinus namaycush) is a freshwater char (salmon) living mainly in lakes in northern North America. Lake trout are the largest of the chars, the record weighing almost 46.3 kg (102 lb).

Lake trout flesh is deep orange in colour and is delicious both BBQ'd or baked. Its flavour and texture is very similar to salmon steak, but with the benefits of having been wild caught and having higher counts of natural omega-3 fatty acids.

Herring

The Lake Herring (Coregonus artedi) is a species of freshwater whitefish in the family Salmonidae. It is also known as the cisco, lake herring, chub, tullibee, and northern cisco and occasionally grows as large as 40 cm and 2.3 kg (five pounds).

Sturgeon

One of the oldest families of bony fish in existence, the Lake Sturgeon (Acipenser fulvescens) are native to subtropical, temperate and sub-Arctic rivers, lakes and coastlines of Eurasia and North America.
