We came across this video the other day and had to share it. It’s brilliantly done – and shows a lot of the work that goes into making macarons. Hope you love it!

From nature’s best and worst to a hotel and Sam Roberts (nope, not at the hotel!), our Helm Creek Hiking trip was a weekend to remember…fondly!

The 6 of us took off for a two-nighter a couple weekends ago. We enjoyed a fantastic hike in the Garibaldi Area (backside of black tusk) and set up camp in the meadow for our first night. Oh my goodness, mosquitoes like I’ve never seen before!!! To make a long story short, we all crammed in one of our 2-man tents to get relief and socialize, my face swelled up badly from excessive bites and we took off the next morning for Whistler Village. Maybe it is being pansy, but we’d all looked forward to this getaway for so long that we had to make it as enjoyable as possible. One big suite in the village, a free Sam Robert’s concert and some celebrating later, finished up the weekend with smiles and great stories.

With a bunch of food lovers together, of course some great recipes came out of the weekend. We had a turkey dinner (seriously!) on the mountain, gourmet breakfast sandwiches, quesadillas with apple, bacon & more (did you get the recipe in this month’s newsletter? – if you’d like it, comment here and I’ll send it to you) and this rock’n quinoa salad. If you try it out, let me know!

Monica’s Crazy Good Quinoa Salad

In true Monica fashion, here is the “recipe”. Forget measurements and just go for it!

Make some quinoa and add:

freshly squeezed lemon juice, lemon zest, oregano, garlic, olive oil, feta cheese, parsley, tomatoes, cucumber, red and yellow peppers, red onion, green onion, garbanzo beans,  toasted chopped walnuts or pecans.

All of these ingredients should be added to preference & taste – as much or little as you like! vwoala!!!!

The other night, with a great package of stewing beef and an extra large bottle of French wine for inspiration, we created THE MOST AMAZING Beef Bourguignon.

I was delighted to be asked to sample macarons during Township 7?s Anniversary Celebration last weekend and relished in having free reign to pair three of our macarons with Township 7 wines. We heard “I thought these were soaps” several times before the sweet cookie and butter cream of our macarons changed any notions of finding cleaning products at our table.
