Dungeness Crab are a staple to the west coast diet. In the Clayouquot Sound crab are caught year round. Most other areas used for commercial harvesting of crab are closed for some portions of the year. All Dungeness Crab that are sold must be male, hard shelled, and 165mm across the back (point to point). Females are returned to the water when they are caught so that they can reproduce. All crab molt from there shells and grow a new shell. Every time they does this they get larger. It takes about 5 molts for a crab to be large enough for market.

Some females can reach 23 cm. Sport Prawns are know for there sweet delicate flavour and firm texture. They are one of the most sought after seafood that comes out of our waters because of this. More than 90% of the Spot Prawns caught in BC waters are exported frozen to Japan. Spot Prawns are the largest commercial caught shrimp in the Northwest Pacific. At Trilogy we carry frozen Spots year round and fresh when in season.

Pepper Sticks are Candied Salmon Sticks that are crusted with freshly ground pepper corns right before going into the smoker. The term hot smoked salmon refers to the temperature of the smoke during the the smoking process. When we do use other salmon such as Coho or Sockeye it is to make Salmon Jerky. Chinook Salmon is used for our hot smoking because it contains the most fat.
