A delicate balance of apple and brandy with a soft, slightly sweet finish. This is wonderful with soft cheeses. In the tradition of Normandy and Bretagne, we start fermenting fresh pressed cider apples in french oak barrels. At the precise hour, we add our own cider brandy to stop the fermentatin and preserve the natural sweetness. It continues to age until it reaches maturity with an exquisite balance of fruitiness, body and alcohol.

They have to be charcoal filtered to soften the harsh taste, so merridale has decided why not make vodka entirely from fruit, so that it is soft and smooth without a charcoal filter. Most vodkas are made from grain or potato because it is the cheapest way to make alcohol. To make it a little more fun and distinctive, we decided to carbonate it. A full strength vodka made from 100% BC fruits with a fizz.

This is a refreshing blend of apple cider and the unfermented juices of a blend of BC berries and fruits. Merridale’s Pub Draft – a lighter, sweeter version of our traditional cider, but still very dry. House cider is on tap in Vancouver Island’s finest pubs and restaurants.
